A simple enhancer with flavoured Butters
Slices of butter will cheer up the simplest piece of fish or meat cooked on the barbecue. Place the prepared butter on foil, form into rolls and chill. Try a bit of experimentation to come up with some winning combinations for flavoured butters, in the meantime here are a few to get you started.
Add to 100g of softened butter any of the following:
Tomato and Basil
1 tablespoons sun-dried tomatoes, drained and finely chopped, 1 tablespoon chopped basil, salt and freshly ground black pepper
Orange and Oregano
2 teaspoons finely chopped oregano, 1 teaspoon finely grated orange rind, salt and freshly ground black pepper
Garlic and Herb
2 teaspoons finely chopped mixed herbs, 2 cloves garlic finely chopped, salt and freshly ground black pepper
Paprika and Parsley
1 tablespoon very finely chopped parsley, 1 teaspoon sweet paprika, garlic salt and pepper
Tomato and Pimento
2 teaspoons tomato puree, 1 teaspoon chopped pimento, ½ teaspoon paprika
Fresh Herb
1 tablespoon finely chopped fresh herbs (try combinations of parsley, thyme, rosemary, tarragon, oregano, basil, fennel, chervil, chives)
Lemon
Finely grated rind of ½ lemon, pinch of salt
Anchovy
5 – 6 anchovy fillets – mashed
Shrimp
20g shrimps – ground, juice of ½ lemon, dash of anchovy essence
